It All Begins in the Maple Trees
Maple syrup comes from sugar maple trees, which grow throughout the Northeast and parts of Canada. When winter begins to loosen its grip and daytime temperatures rise above freezing, the trees start producing sap. This short window, known as maple season, usually happens in late winter and early spring.
Producers carefully drill small taps into the trees and collect the clear sap as it slowly flows out. A single tree can produce sap for decades, making this a process that respects both tradition and sustainability.
Turning Sap Into Syrup
Fresh maple sap looks more like water than syrup. In fact, it takes about forty gallons of sap to make just one gallon of maple syrup. Once collected, the sap is brought to a sugarhouse where it is boiled down.
As the sap heats, water evaporates, and the natural sugars concentrate. The longer it boils, the thicker and darker the syrup becomes. This step requires patience and careful timing, since even small changes in temperature can affect the final flavor.
Grading and Flavor
After boiling, maple syrup is filtered and graded by color and taste. Lighter syrups tend to have a delicate sweetness, while darker syrups offer a deeper, more robust maple flavor. All grades are pure maple syrup, just with different flavor profiles.
